You dont get it, its not viable because the wrestler is going to be putting you in positions where you will rarely if ever be able to do those things, whereas he would be able to do them at will because his skills allow him to control the fight. Thats the whole point of wrestling/grappling - control. The ground game is finely tuned to take away your leverage, space and ability to move. If someones on you like a boa constrictor pinning your arms/head/chest the only way you're getting out of it is if you actually know the technical ways to escape. You're not going to beat Khabib in a fight to the death by trying to bite upwards at him from your back like a pinned down angry chihuahua or trying to tickle him for ****s sake lol. Even if you did find a way to bite or snap someones fingers the most likely result is they go "owwww" and then turn into a raging demon. Its usually a pain/maiming thing rather than an immediate fight ender, especially when adrenaline is involved. From off your back the same probably applies to eye gouging as well because you wont get the leverage to make it really nasty. They on the other hand could straight up dig their thumbs into both your eyes and push all their weight forward into it, which would completely blind you in seconds.
Pure wrestling ie the college and olympic stuff is equally one dimensional to boxing. Although I would say in a rock, paper, scissors situation pure wrestling is generally going to beat pure boxing.
MMA context wrestling (which is obviously heavily mixed with BJJ) is a different story though.
