That was a long time ago in 2012 when people thought Canelo was avoiding certain guys. He tried to fight Paul Williams before his tragic accident and then Victor Ortiz before he got his jaw busted. People were talking about Kirkland before the Lopez fight happened. Kirkland was going through some stuff so that fight never happened.
Now after Canelo took on Trout, Lara, Mayweather, he has proven he won't duck a challenge and I didn't see too many people saying Kirkland was going to win other than alot of wishful thinking.
People that aren't fans want to see Canelo lose so they hype these guys up. If the Cotto fight happens people will ignore that he was his title against a 40 year old guy with two shot knees coming off a year layoff and hype him up as well.

Why do some MMA fans think just cuz an MMA fighter works on a ground game that he would automatically beat a Boxer everytime?
It might be because MMA fighters don't "just" work on a ground game. They are usually Black belts in judo/Sambo/BJJ or have a collage or olyimpic wrestling background. A straight boxer is just as defenseless against a takedown as the normal everyday person on the street.
But in my experience in both, generally MMA fighters throw much slower then they should be able to with the small amount of weight on their gloves, yet we see boxers even in higher weight classes throwing like MMA's featherweights.
Maybe it's because the only thing a boxer works on is punching? It's really not that hard to figure out why captain obvious.

Face it, MMA fighters probably work on hands just as much as anything else, and for them to generally have THAT BAD of hand speed is sad. I can throw faster than Miguel Torres with 16 oz Boxing gloves than he does with 4 oz MMA fight gloves.
