How many sets depends on how much training you're doing besides weight lifting. If you train hard and often you should probably stick to three sets of 5-8 reps of each exercise two or three times a week. If you don't train as hard or as often then do four or five sets of each exercise two or three times a week.
You also need to consider your diet as well. If you're cutting weight then you should go lighter and if you're gaining weight you can push yourself harder. After a while you'll be able to tell how much to limit yourself to.

The main thing to worry about in regards to diet is that you're eating the right amount of calories and protein. After that you want to make sure you're eating a good proportion carbohydrates and fat within the calories you're eating. You should be getting about 20-30% of your calories from fat, 20-35% of your calories from protein and 45-65% of your calories from carbohydrates. After that you can worry about what kind of fat you're eating and getting enough fiber, but you need to make sure you're doing the more important things correctly first.
