Because Canelo is predominantly white, and there's plenty of predominantly white Mexicans. Honestly, I don't even know what's the criteria to call someone white. Is it color? Is it ancestry, genetic make up?

Canelo had mentioned that his great grandfather from his mother's side was a soldier from the Saint Patrick's battalion, which was a Mexican Army's unit mostly composed of Irish immigrants.
As for Canelo's father he looks like a tanned Spaniard:

Mexican is a nationality, you have Asians, Arabs, European, Africans.
Mexican is not a race, most Mexicans are Mestizo (indian and white), but others are in between.
The Sulaiman family (WBC Presidents), they are Middle Eastern decent.
