South east asians make great fighters only thing keeping them back is proper training and size to compete in higher weight classes.

A change of diet is not going to suddenly erase/overturn the thousands of years of genetic programming. Evolution takes thousands of years through sexual selection or environmental pressure.

Thailand, the Philippines and Japan have a fighting culture, not only boxing but other full contact martial arts as well. Most of their people are still completely out of shape and will start breathing heavily when having to walk for more than 5 minutes. Facts, I've been there multiple times. They are slim because they don't eat as much crap as us Western folk but their level of physical fitness is non existent.
Indians don't even glorify fighters like those other countries so no surprise there are none.
Btw, all of the "studies" you mentioned, none of them talk about genetics. You can't look at someone and then try to assume he is in the shape he's in because of his genetics. You'd have to go to the lab and let the scientists do the analytical work, not look at people, weigh and measure them and then make wrong conclusions and take wild guesses. 1. indians have low lean muscle mass and skeletal mass. What does this entail? Skeletal mass in essential for movement and physical function, the less skeletal mass you have the less function or ability and strength.
2. indians have low cardio vascular and lung capacity. Obviously the less oxygen you get the less efficient your body will work, making indians physically less fit
3. Indians are predisposed to have high body fat and low lean muscle mass which makes them prone to diabetes
4. indians have the weakest grip strength in the world

if you look at this following table the indian and asians have a similar mean height 172.3 and 172.2 respectively yet they have differing amounts of lean muscle mass.
Asian males = 59.6 kg
Indian males = 53.3 kg
So even if an indian is the same weight class as an asian, african, euro or hispanic he is going to have significantly less mass

Why is it that west African descent athletes dominate in the 100 meter sprint? Surely this cannot be accounted for solely by nutrition or training. Actually tried rat whilst backpacking in south east asia in the early 2000s. It is actually field mice. The mice only eat rice and other flora and is cleaner than pork. Pigs eat all sorts of rubbish including their own dead offspring and faeces yet people have no problem eating it. pork also is prone to have all sorts of parasites in its meat.
The mice taste like a mix of chicken and pork and is never dry. Has the perfect amount of fat and is extremely tender. Some mice get big as a small chicken believe it or not. had one grilled just like in the picture
