To answer this question I will start by looking at a few of Canelo's fights:
Callum Smith: Smith tried to use his jab to maintain distance but Canelo is built like a tank but also slippery. Also, Smith allowed Canelo to get a head of steam so covering up along the ropes and trying to counter isn't the answer.
James Kirkland: A lot of people felt like Callum Smith should have simply thrown caution to the wind but they obviously forgot about this fight. Kirkland tried to go into savage mode and got savagely knocked out. In other words, trying to exchange with a handspeed disadvantage also isn't the answer
Amir Khan: Of course we know how this one ended, however Khan's handspeed was bothersome initially. Khan obviously got walked down but he did show that a smaller guy with handspeed can do better than a bigger guy trying to catch and counter on the ropes
Erislandy Lara: Lara costs himself by moving so much, and he might have pulled out the victory if he had stood his ground a little more. He did show that good footwork can be difficult for Canelo
Floyd Mayweather Jr: Obviously there was no shame in a young Canelo losing to an older HOF fighter, however Mayweather's performance showed that a smaller guy with both handspeed (Khan) and footspeed (Lara) would cause issues because Canelo didn't have the advantage as far as being slick.
Gennady Golovkin: Golovkin wasn't able to throw combinations because he was wary of Canelo's handspeed. Instead he just hung in there with a thudding jab and an iron will.
Now, to answer your question, I think a smaller fighter (or a big guy, but not so big that he's a big target), with comparable hand and footspeed (or overall coordination) would trouble Canelo the most.
The big guys (Kovalev, Callum Smith) because he's too slippery and it's over once he gets a head of steam and starts ripping body shots.
He’s not the same fighter he was a few years ago. He’s much better. No version of GgG comes close to this Canelo.
But he’s not unbeatable. Would take a technician with speed and a good jab. Or maybe a big 175 pounder who can walk through Canelo’s shots.
He’s a great fighter now. Really has honed his style and I feel like his weaknesses from earlier in his career are gone. But he’s not going to go undefeated the rest of his career.
fair judges and to NOT be strategically matched. Canelo is a B+ fighter who has been strategically matched.
Lost to Mayweather and Golovkin. Was given a gift and even in one of the Mayweather judge's card he was supposedly a draw, LOL!!!!

In the eys of 99% of analysts and people Golovkin beat Clenelo twice.
Clenelo knows how to jumo from the Clenelo weight to whatever weight is convenient for him.
