How can Canelo be P4P #1? He has an impressive record, yes, but he has only fought 5 notable fighters. Mayweather, Lara, Trout, Cotto and Kirkland. So, going only by relevant fights, how did he do?

Lara/Trout did well enough for many people to feel that Canelo at best deserved a draw against them.
Cotto, not even a real middleweight boxer, had been irrelevant for years, having lost to Trout and only defeated an old Martinez with an injured leg. It was an okay win for Canelo, but only that, an okay win.
It was impressive how Canelo destroyed Kirkland, but it's not exactly a "great" win.
Canelo is good enough, but to make his own weight class (155 lbs) and always having the scorecards on his side (even losing only by MD when Mayweather completely dominated him) is disgusting.
In my eyes, Canelo is a good boxer, but it's so wrong to have him as the P4P #1. Golovkin would destroy him and even Golovkin would not be in my P4P top 5.
