So imagine the current version of Canelo, who has worked on his fitness and made subtle adjustments to his footwork and punch selection, at 154lb, without being drained against Mayweather at 154lb...would be it any different?

Question why would this thought enter your head?
What has Canelo done exactly to say this fight will be different to you?

Did he beat Trout convincingly~ no
Did he beat Lara convincingly~ no
Did he beat Kirkland convincingly~ yes
One mediocre boxer
One pretty good boxer that has a limited set of moves
One brawler who can't box his way out of a wet paper sack.

Beating up a punching bag like Angulo and Kirkland doesn't say anything to suggest he can still be competitive with Floyd. Especially as the only other boxer and mover he fought since Floyd was Lara who made him look foolish at times. Although Lara and Floyd don't fight that much alike, Floyd is much more accomplished than Lara and knows how to win rounds better.
I believe it would be basically a repeat of their first fight.

Not to mention the maturity that comes with age, being 24 as opposed to 22 last time out. And another major factor, not having to boil down to 152, Canelo is already big at the weight, cutting that excess weight was bad for him. So there are a lot of factors and rematches are a part of boxing, especially when the same guys are near or at the top of their divisions.

If he invests solely into the body like he did with runner Lara then possibly, POSSIBLY, key ****ing word, possibly, there is a chance that the fight would be more competitive. But comparing Lara to Floyd is foolish so I can't say with certainty that a rematch would go any different.
