The only Winky fights I've seen were his fights with Mosley and Tito. He does not roll his shoulders and does not tuck his chin. He pretty much puts both of his hands up and jabs.
What is so good about Winky's defense?

His timing with taking punches on his elbows and gloves...and his jab. His defense works so well because he always keeps that jab on you, he's very physical, and he can time punches very well.
Not anyone could function in that defense he uses. Winky earmuffs a lot of shots effectively as well.Comment

its not stylisticly perfect as in its aesthetic appearence
and its not technicly perfect either
he simply works with what he gots
and he makes it work

thats why i wouldnt consider him a defensive genious
just a guy that knows how to block

hes very good at blocking shots well, like someone else said he doesnt dodge an awful lot hes pretty much there to be hit but his defensive timing is excellent and he makes very slight moves to make his defence work for him, he doesnt get hit clean that oftenComment

What's so good about his defense? Well, he blocks tons of punches with his arms and gloves, pop that jab at every opening, and keeps his opponent from landing significantly. LOL@ the shutout he pitched to Tito.Comment
