That's a great debate. Does 97 Hops beat 2001 Hops? What about 99? Too close.
The Trinidad fight wasn't the start of greatness, it was the start of his fame. Even before he beat Tito he was recognized as far and away the best middle and a top ten pound for pounder. But beating the superstar Tito - and in the manner he did - elevated him on many levels. But those skills didn't just show up at that fight, they were already there. It's NOT a coincidence that the only fighter to beat Hops was Roy.
All I know is that I was not super impressed with Hopkins when he fought Echols... either time. I felt he still got hit too much because he was trying to be too aggressive. The first time he really sat down on his strategy and just broke a mother ****er down was against Felix.

I don't think Bernard Hopkins can just magically become a great fighter after the Jones fight or develop such a great defense! Maybe his defense didn't look that great in that fight because Roy Jones was so good that Roy didn't allow him to box in the style that made him so successful afterwards?

Echols is pretty underrated. And was damn near ruined by Hops in those two fights.
It's interesting that you point out him getting hit too much against Echols. In their first fight, Hops eased off from his early attack and easily outboxed Echols. But the hype surrounding the rematch was that Echols was able to drop Hopkins during a break. And seemed to land a couple shots early that seemed to bother Bernard. Forgotten was the thorough ass whipping Hopkins gave him.
So they fought again. And Hopkins beat the **** out of that poor boy.
Echols still went on to stop Charles Brewer, who Calzaghe has stated was one of his tougher opponents. And that was right after Brewer's war with Echols. That should tell you something. Great debate, though.

Benn at 160 and 168 was the most dangerous fighter in the world and the hardest puncher.
Ruiz at heavyweight is a slow, average, really crap fighter with no real punch.
