Bentt vs Morrison definitely comes to mind. But right after, the fairly unknown Herbie Hide put Bentt into retirement. So that was pretty remarkable.
Victor Galindez looked beastly and hadn't lost in 6 years when he was TKO'd late by Mike Rossman. Rossman had lost to Yaqui Lopez by TKO earlier in the year, so was considered a pretty easy night's work for Victor.

Ken Norton’s Win over Ali comes to mind.
Ralph “Tiger” Jones was a journeyman when he defeated Sugar Ray Robinson in his comeback fight. While Robinson wasn’t a champion for that fight, he was already considered an ATG.
