You mean in terms of pure fight excitement? Like knock down, drag out wars type excitement? Dunno. Hard to choose only three. If it was fighters I watched a lot that's a little different, but if it's just in terms of excitement in back and forth wars etc, it would have to be guys like:
Saad
Chacon
Ward and Gatti (not just their fights between them but all of their fights)
Little Red
Morales
Barkley
Jung Koo Chang
Obviously that's a lot more than three, but I just couldn't keep it down. More just kept on popping into my head that I couldn't leave off.
For instance, Chang has lots of amazing fights, but his one with Katsuo whatisname in particular is truly up there among the best fights I've ever seen. It equals Carbajal/Chiquita in Flyweight brilliance.
A touch choice to choose just 3. I'm going to discount any fighters pre 1970 since I have not seen enough footage of the greats to say who excited most back then.

Boxing trumps every other sport by far for artistry and excitement.

Marvelous Marvin Hagler (after he declared that he would no longer leave it to the judges)
Marco Antonio Barrera (he closes his eyes when he punches sometimes, but he fights magnificently despite his fear)
Miguel Angel Cotto (any minute you know it can come apart...any minute)
Pryor, Hearns, Trinidad. All three fought with unbridalded aggression but they all had world class skills and punching power. I still say that if Hearns had an average boxing chin he would have been the greatest fighter ever.
1. Manny Pacquiao - whatever you think about the man, no one can deny his fights are hugely exciting
2. Michael Katsidis - he just brings it - every time
3. Nigel Benn - entertaining fighter with power
Hamed, Gatti honourable mentions Amir Khan is a very exciting fighter too. I'm sure I've missed others.
