Mayweather and Jones definately not textbook. Jones relied heavily on reflexes and speed. Mayweather has good defense and technique, but a style that pretty much only works for him. The most textbook fighter to study would be Hopkins or Marco Antonio Barrera.

european fighters are typically very textbook.e.g. Sven Otke, Marcus Beyer, Felix Sturm. They like this, because of strong amatuer background, with hundreds of am fight experience.
However, copying textbook fighters doesnt always work. Guys with awkards styles like RJJ, Pacman and Mosley give huge problems 2 textbook fighters. Such fighters made mince meat of textbook competitors, especially in titles fites. e.g. Jones Jr v. Woods ....

Mayweather blocking with shoulder technique is unreal, u really gotta admire it. Thats shows his expierence, ability to conserve energy and at the sametime keep well in range of his opponent.
His technique is really representative of elite pro fighters of today( similar to toney's shoulder rolling technique), compared to other elite pro fighters still have boring amatuer styles. e.g. heaps of euro fighters.

Jones Jr beat Woods because he is a much... much better athlete. It definately was not because of Jones Jr's technique. When Jones's reflexes had faded a bit and he didn't have the reflexes and speed to fall back on as much, he struggled with good textbook boxers such as Johnson and Tarver. Hamed versus Barrera is another prime example of how with good solid textbook boxing, a boxer was able to beat a much better athlete.

Mayweather is brilliant no doubt, but I wouldn't recommend and amateur fighter learning the sport try to adopt his style. It is a style that pretty much works only for Floyd Mayweather.

Hopkins is the best fighter to study, or Barrera. Others that come to mind would be Wright, Holyfield, and probably Johnson and Tarver now that I think about it. There is nothing wrong with studying Mayweather or Jones to pick up bits and pieces, but they are the type of fighters that you generally say "look, but don't try this at home". I remember when Jones knocked out Kelly with his hands were behind his back, Emmanuel Steward immediatly said on air that young fighters should not be looking to copy this.

You will eventually adopt your own style where you can vary things like how much movement, angling off or staying in the center of the ring, stuff like that. But almost everyone needs to keep basic principles such as hands up, chin down, and stay on balance in order to be successful.

If you are going to observe fighter styles u should watch some of winky wright's fights. He has a very good (but boring) defensive style.
