2 years is a long time out for an amatuer MMA fight, depending on how hard you're working. I'm not saying its bad to wait that long, but if you have a little say in who you're matched up against, it'll likely be a mismatch in your favor. Which is good if you're looking for an easy win, which may be a good way get over the cage nerves. But there are a lot of guys in the MMA world that are just bar brawlers, or guys who got into a lot of fights in highschool, etc. So as long as you're not going up against another guy who's been training extensively, you should be fine.
Sambo is awesome, BTW. I don't know a whole lot about it, but I know an older guy from the russian military who teaches it, and it is very cool to watch, and the subtlties of the weight distrubution is cool. However, do they teach a No-Gi, style Sambo? If not, you need to also look for some No-Gi jujitsu or something. Because without a gi you are very limited on your submissions, also things are significantly faster because the gi creates a lot of drag, and absorbs sweat. So you need to know what to do in the fast paced no-gi MMA world.

I think its good to take a lot of GI classes as well, because of the mental focus it requires. With a GI, you have a million different ways to be choked out, so you have to be very focused and defend everything. But you definately need No-GI training if you're going to go into MMA.
Sounds like you have a pretty good plan. Make sure you attend a lot of the MMA promotions you intend on fighting in, get a good feel for the fighters and who's who, that way when its your time to fight, you'll know if they're feeding you to the wolves or trying to match you up good.
