there are not many exercises that strengthen the neck specifically. the neck is a strange beast. your head weighs a lot, and generates leverage because it protrudes so high off of your shoulders. your brains weighs eight or ten lbs on it's own. carrying your head around is actually pretty decent exercise.
shrugs with a straight bar
squats
deadlifts
stuff that makes your body overall larger and stronger will help you to build the muscles in your neck and everywhere else. if people are looking to get larger anywhere i generally tell them to focus on their legs a bit more than they think they should. there's so much muscle in your legs, hips, and ass. your body needs it to be big to remain proportioned if you want a big upper body (the upper body is what most people associate bigness with, and that's what's going to make you "look bigger")
there are also special harnesses that secure weight to chains and hang it off of your head that allow you to basically do curls with your neck. strange stuff. i've only used them sparingly. maybe if you're using high weights and low reps you can look to "build" muscle quickly your neck, but i highly doubt you'll see gains the way you do on your chest, legs, back, and arms, when you build them. i'd suggest low / very low weights, and just look to put some work in instead of looking to put on weight each week the way you do when you're building your body.
sorry i cannot be of more help. i had a 19 inch neck in high schooli shop at the big and tall for dress shirts, otherwise there is no way in hell i will ever get the thing buttoned around my neck. they have a small elastic holding the button on. no joke.

a couple of notes on the neck :
big necks are often a byproduct of activities that only indirectly involve the neck. taking hits in hockey for me is what i believe told my body from a very young age "OK, you need to build this thing up. let's get you a big neck."
driving a car around heavy corners, riding a dirtbike, and most importantly taking hits in sports, these are usually the proceses that i associate with developing a strong neck, not necessarily work in a gym.

Lie down at the end of the ring on your stomach w your head off to the side, loft your head up and down 50 times, do thisnon both sides, and than the back. Do it at least 4 times weekly, do more reps as needed.
When I started doing this I immediately noticed the results, I was laughing at my opponents punches, stopped using head gear all together.
Also work shoulders a few times a week, don't lift heavy, go for 12 to 15 reps.

^Well, traps in terms of strength, yes, but in boxing, I wouldn't say you really need strong traps. However, BIG traps help A LOT. Shrugs and front raises are the ONLY exercises I bodybuild with frequently (sometimes I bodybuild with other exercises just because I enjoy it, but I usually don't).
REALISTICALLY, you can have some pretty bad defense and footwork/movement, but if you keep your chin tucked and have beast traps/front delts, you probably won't get knocked out much.
