I have a recollection of Eubank doing it... and now I'm wondering if it was in one of the Watson fights.

A bloody P4P #1. Roman 'Chocolatito' Gonzalez making Sor Rungvisai run, after breaking a Compubox record for the Superfly weight division in the 12th round, was epic.

I doubt any fighter, at the highest level has actually called out for mercy but there are quite a few who have slumped over and known they were done - Morales against Pac, Tyson against Lewis, McBride and Williams and famously Victor Ortiz and his nonsense "I shouldn't be punched like this" comment

That is just silly fake pro wrestling. No need for a boxer to beg for mercy. If he has had enough he just says so and the fight is over. Simple as that.
