Wilder didn't quit. If you look at the video of the stoppage, the last punch thrown in the fight was a weak left hook/uppercut from Wilder that bounced of Fury's chin while Bayliss was separating them.

Wilder wasnt going to last and the look on his face related that he was DONE. He was only throwing back, barely, out of reflex. Fight shouldve been stopped in the 6th imo. He was gettin his face punched in and looked lost.
