... why did I simply assume that Taylor-Serrano would just happen at 135lbs (Taylor has all the belts at 135lbs, Serrano is basically a 126lb fighter who is willing to go up all the way to 140lbs) ?

If Taylor wins her next fight is likely a catchweight with Braekhus. So she's going to drag Serrano as far up in weight as she can go, because Taylor is moving up next if she wins.
