The ref asked if he was OK, he said yes. He didn't quit, there is no question about it.

Was he gassed or concussed, possibly.

Was he about to get KO'd, probably.

    Good stoppage, I think so.

Go watch the Loma run if you want to see quitting.

If you want to expand quitting to include having the fight beat out of you but trying to continue, don't.

        Are you ready to fight?
        “...”
        “Can you continue?”
        *whisper* “yes”
        “Walk towards me”
        ...
        “Walk towards me”
        ...
        *calls off fight*

Sure reads like a quit job.

He said he did when the ref asked him. That's what I'm going to go on. I'm not going to play amateur psychologist and assume he meant something else.

Physically he was done. That's it. He didn't quit and I'm not going to assume he wanted to. Boxers spit out their mouthpieces a lot when they want to buy time. Corrales did it against Castillo. He sure as hell didn't quit.

Why didn't I see the ref handing AJ back his mouthpiece before waiving him off?

I distinctly recall him picking it up off the canvas, and usually most refs do that before asking if they want to continue. I just saw AJ's teeth with a semi grin of embarrassment from getting whooped and a slight nod yes, then it was waived off.
            I found that odd.

Maybe he just wouldn't say "Yes" when he was asked "Can you continue?", that to me is quitting in a way. Just didn't have it in him to admit it verbally and say "No".

Mouth guard goes back when there’s a lull in the action. You don’t just get to spit it out and call a timeout because you’re tired.

Joshua would have known that if he wasn’t protected in previous fights and allowed to call his time outs previously.

Doesn't matter if he quit, how many times do you think his corner and the ref would let him get knocked down before they throw the towel/wave it off? I think he knew it was over, he was done. Both Ruiz and the pressure got to him, but in the back of his mind was the rematch clause, so he's probably somewhat relieved that he has a chance to get his belts back. The fight was an upset but it's good for boxing.

                      Pretty much.

Anyone can say they want to fight, but leaning back on the ropes and making no real signals you want to fight is basically asking the ref to stop it. The fight was beaten out of him, he just let the ref make the decision and made it easy for him.

That for me is as good as quitting without literally saying it.
