Maybe because he already has two fights lined up? Maybe because by the time he is able to fight him the title will have switched hands? Would be kind of nonsensical to call out a guy that may not have the title by the time you face him. Joshua didn't quit, his legs quit. You could see at the end he tried moving off the ropes and his legs were too wobbly to support any claim to the referee that he could continue, so he went back to the ropes and the ref made the right call as a result.

His chin certainly isn't his best attribute though.
Hopefully he can improve his defense and general boxing smarts enough to compensate.

Ruiz is the man. So impressed with his composure, speed, distance-control, combination punching, tactics, and near-Thanos-level chin.
I'd love to see him make it into more championship fights, not just the rematch. Fury and Wilder might make sure they're a bit too tall/long and elusive though, especially given what they saw last night!
