It's crazy how Joshua always talking like 25 years old or something lol. It's like dude WAKE TF UP your pushing 30.
In 5 years you'll be 35, so no you don't have another 5 years of honing your skills your not going to get much, if any better than you already are now.
Plus Joshua's got that big muscle stocky type build. If we think about past boxer's who are built like that from Ali to Tyson to Haye most of these guys are all but finished by the time they reach their mid-30's with the exception of maybe Lennox and Klitscko. Either way It's not a build for longevity in boxing.

Because he did not need to and the offer will likely be better next time it comes. The value is continuing to increase.
His interim fight was against Breazeale who was as not threatening an opponent as he could hope for and Joshua is not fighting some kind of world beater either so his risk was minimal.
Why lock in something when he can literally do no worse than before and likely better, for the Joshua fight. Anyone arguing otherwise does not get how any of this works and need not be listened to.
