Paulie had his masculinity questioned by Conor so is doing it to prove something because he's too prideful. He knows he can't hack it in boxing anymore because he's shot. So he thinks this avenue is the best cause of action. They're not top fighters so he fancies his chances.

Not a great idea when your hands are not great. But he probably thinks he'll just have to use the jab and his slickness to dominate these low class fighters.
