Canelo and GoldenBoy are pretty shady. But they can be beat anyway, even when they have unfair advantages (judges, gloves, wrapping, PEDs.) The goal is to try to reduce the cheating as much as possible, and try to get a somewhat fair fight.

Yes. They are untested and do not conform to Nevada's rules. The commission allows fighter to select their brand of gloves but they have to be approved and tested by the commission.
