Even if the stadium was open now, there's no way that any big event would every be held there, regardless of what Oscar De La Hoya has to say.
MGM Resorts paid north of $16m to get the Cotto-Alvarez fight, and then chose to host the event at Mandalay Bay (largely for the gamblers, high rollers and regulars, who spend money with MGM Resorts).
Mayweather-Pacquiao had an official gate of $70m, off of less than 17k tickets (again, with near all of the tickets reserved for folks who did business with MGM Resorts, Mayweather Promotions, and Top Rank Inc).
I don't think there's a pricing scheme that anyone can come up with that would have a stadium out-generate the revenues that could be derived from simply casino pricing things from T-Mobile Arena.
JerryLand's highest gate, if I'm not mistaken, was around $10m.
Mayweather-McGregor from T-Mobile Arena (with Mandalay Bay, MGM Grand, and the rest of the closed circuit sites across MGM Resorts, with the PPV likely kept exclusive to MGM Resorts in Las Vegas) has the potential to deliver live receipts approaching $100m.

Alvarez-ChavezJr ended up generating over $10.5m at the gate (verified by the NSAC); Golovkin's biggest event, after 4 straight years of push by HBO, likely did over $2m (Tom Loeffler is the only party to insinuate $3m for the Golovkin-Ward fight; view the source accordingly)
Canelo-Golovkin, if folks are being honest with themselves, would be an utter blockbuster of a fight if it tops 800k PPV buys.
