Outside of physically not being able to fight below 160, there's literally nothing to compel Alvarez to fight at 160.
There are quite a few boxers both Canelo and GGG can fight at 160 that would be interesting fights. Jacobs, Saunders, Quillin, Rosado (vs Canelo) just to name a few. But we all know Canelo will be bringing up smaller fighters to face him.

Canelo fighting smaller fighters is real competition? Josesito Lopez and Miguel Cotto were significantly smaller than Canelo. And the only reason Cotto was even Lineal Champ was because he beat an old and crippled Sergio Martinez. A prime Maravilla would have smashed on Cotto hands down, and would give Canelo a run for his money and maybe even beat him.

Ward is a Light Heavyweight, quit bringing him up. Maybe Ward should face Klitschko at Heavyweight perhaps...
Cotto briefly got Alvarez tied up with a sanctioning fee (after the Khan fight, with the WBC now trying to flex terms, I see Alvarez happily handing them back their belt), but after the Khan fight, he'll likely go back to what he was doing before (WBC/WBA/IBF 154 belts are tied in with Haymon, with the WBO 154 belt available but currently in the UK).
A Miguel Cotto rematch, Gabriel Rosado, Liam Smith(WBO champ), Kamagai/JSK winner, Lemieux-Tapia winner, Michel Soro, Joshua Clottey, and Anthony Mundine(bunk fight, but a fight that is sellable in multiple markets) are all fights that Alvarez can take at 155 and be just fine with, competition and business wise.
With Alvarez getting into his mid 20s, he's likely 12-18 months from no longer being able to comfortably put his body through the boil down. Come that day, he'll commit to going to the full 160 and target the champions at that weight.
If Golovkin has all of the belts by that point, Alvarez will have his camp talk business (assuming the Oscar/Floyd talks as the starting point, I'd assume 70/30 Alvarez is the furthest they go); if Golovkin camp balks, Alvarez likely just takes on the most exciting 160 fights that he can make otherwise.
