Are easy fights/exhibitions/10 rounders the only way to go past 100 fights nowadays?

The only one close to 100 fights in recent times is James Toney? Although Toney probably has a worse weight problem than most other old timers apart from Tony Galento.

I'm pretty sure Gene Tunney didn't know wtf carbohydrates were.

Although pre-1960 I think most guys averaged 60+ fights before 35.
Gene Tunney was an educated, very well-read man and very concerned about nutrition and training. I'm sure that he knew about carbohydrates since it was already a common term.
