I don't think the knees would play a significant role in his ability to absorb a punch. Gravity is doing all the work in keeping your relation to the ground, aside from where you place your feet. That instinct is doing all the work by putting them into the right spot, you'll be bracing to absorb the punishment naturally.
Plus, keeping your hands up doesn't have much to do with how bad your knees hurt/function... but that's neither here nor there
The knees would play a factor in the mobility, which to me looked fine all night because he was on his bicycle the entire time. If you watch the fight, there isn't a moment where Sergio isn't circling to his left (which was actually pretty odd to see a southpaw do so adamantly).
