I think he looks ok (although I'm not some sort of nutritionist).
Think about the times Morales used to come to the scales looking half dead and soft. It's not all about how you look, it's about how you feel. Look at the shape Bradley comes in at the weigh ins - I dread to think how low his body fat, water retention is but he's always prime come fight night.
I doubt Canelo is water drained right now (unless there some tight 7 day weigh in limit). Usually, a boxer will be drinking gallons of water all day/every day up until the day before the weigh in to trick their body into thinking it still needs to pee every 20 mins (even though your not taking on water), and release water most efficiently and thoroughly.
I personally think it'd be safe to say, the version of Canelo we see against Mayweather will be of equal strength to the version we saw against Trout.

At least at 154, it's all on Canelo. If he can't make it it's his fault and you can't blame Floyd. At 152 .... we can say he tried but like Floyd said "He remains undefeated because he was drained!"
As for the 157.4 weight, people need to remember that it may be that Canelo had just finished a workout, taken a shower and weighed himself. After a meal, he will go back up over 160.
I'm sure that he is training hard to make 152 ..... but I'm sure that he also trained hard for the Trout fight and Canelo had stamina issues and only worked for 30 seconds per round.
Canelo already has issues. His only advantages were youth and size but Ellerbe and Floyd is hoping that going down an extra 2lbs will decrease those only advantages that Canelo has and augment his weaknesses (eg. stamina issues).
