Because he eats more than he needs. A simple question.

He is fat. If he wasnt`t fat, he would be a cruiserweight, maybe even a light heavy.

He is not as muscular as Mike Tyson was.

Garbage genetics and penchant for all things greasy

I couldn’t look like that if I tried.

Andy might have the Prader-Willi Syndrome.
A key feature of Prader-Willi syndrome is a constant sense of hunger that usually begins at about 2 years of age.
Or it might be that he just likes to eat. (a lot!)

The reason he put weight on after the AJ win was because him and his coach thought AJ is a robot who can't box and will try to knock Ruiz out in the rematch. Putting on weight would counter that. However they also wanted aj to come in lighter and hence weaker, by selling the story of ruiz doing cardio and getting fitter. they would tease that through the odd ruiz training video, showing him 'losing weight'. AJ did indeed come lighter, but he came to box.

                    later ruiz binned manny robles.

he is at his best at that weight he was against aj in the first fight.

In my opinion, Ruiz would be a light heavyweight if he were to go all-out on diet, cardio and carefully scheduled intermittent fasting. His shape would improve vastly, but would his conditioing be better? In theory yes however his punch resistence may be gone. We saw a little of that over the last few years Chris Byrd fought.
