Skill for skill Alvarez is by far the superior fighter. The only attributes Bivol has over him are, strength and possibly punching power 'Yes I would say Bivol hits with more power than Alvarez'. Bivol also most likely has better endurance, but I am unsure on whether he is the type of fighter to set a high pace.

Bivol's best chance of beating Alvarez is to set a high pace, and just aim to hit any body part of Alvarez. Arms, body, Gloves, Jab to the throat you name it.

Yeah, Canelo is still underrated interestingly. This was understandable in the early times when he was starting to fight bigger fighters during 2017-2019. But, he shouldn't be underrated and should be heavy favourite right now. His all recent fights were against bigger fighters. He is favourite in odds though. His being underrated makes his victories more and more special.
