I don't think Tom Saunders's demands are a case of the B-side trying to be the A-side, I think he isn't confident his son will win, is concerned about him taking a bad beating, he's trying to take everything he can get. The ring size is important, no doubt about that, that would make it harder for the opponent to cut the ring off, a bigger ring might allow Saunders to delay Canelo's ring cutting, but if a fighter has the footwork to give a great fighter problems, he doesn't need a big ring, he has the technique and skill to make use of his feet by making small adjustments, positioning his feet to set up his shots, being just out of position to be hit, and those things are not often affected by the ring size. The ring size will only matter for as long as Saunders isn't on the ropes, Canelo is not only great at cutting off the ring, but he does a great job of keeping a fighter on the ropes, and that's another thing that's not affected by the size of the ring.

Ring size does matter. Leonard knew it when he fought Hagler so he insisted on a 22' ring. Pretty sure we can trust Leonard's judgment on this one. He knows a thing or two about boxing.

Canelo fans should care before real fans want to see the best possible fights against the best possible opponents, not just some hapless Turkish dude pretending to be a heavy bag. And by and large such fights happen when both fighters are in a position to bring their best game, not when they are dehydrated, fighting at a weird catch weight, forced into a short camp, squeezed into a tiny ring etc etc
Sadly a lot of 'fans' are exactly that, fanboys who don't know the sport and just want to see their hero beat up on someone and if he loads the dice in his favor, whatever. It's a Triller world.
