Nobody ever talks about it, but Larry Holmes ducked plenty of contenders while he was defending his title against some of the worst stiffs ever. During his title reign he never fought:

He also didn't give well deserved rematches to Tim Witherspoon and Mike Weaver.
It needs to be said that a lot of this had to do with Don King.
I would say Carl Williams also deserved a rematch.
