I could understand that theory if they were fighting in Manchester for Hatton's 140 championship, but not in this scenario.

Because of the momentus nature of this fight, and the particularities surrounding both fighters' careers, I can easily envision a fight where the judges will reward the aggressor and penalize a runner (if you want to call it that). I guarantee you right now the majority of the crowd (yes..in L.V. USA) will start booing the instant Floyd starts his fleet footed stuff. Zab beats Hatton? The probabilities are against it. OF all those in your list, Cotto represents the stiffest challenge to Hatton, IMO. That would be a good fight. Who knows? We might end up seeing that one as well.
