    Amen! My philosophy has always been to make the skin nice and to make a nice gravy... then you do not have to worry about trying to season a dense Turkey breast with a bone in it.

    For a great gravy throw some dry white vermouth in there. Gives an absolute great flavor, not too strong, but clean!
