Arturo Gatti. Unless you're talking about going with someone else's punch and countering, then I'd say Whitaker, Marquez, possibly Mayweather.

Otherwise, Gatti, Holyfield, Chavez, Trinidad, Barrera.

I assume you're talking about same time counter punchers, so that would include, and I'm looking at current names only: Danny Garcia, Juan Marquez, Manny Pacquiao, Timothy Bradley, Miguel Cotto (although he is a bit on and off with this but with Roach, he does seem to use this ability more) among others.
