Those contract holdouts are not fight contracts, they're contracts with the club and the only risk is that a player can refuse to play, sit out the contract and effectively waste the club money, eg fake an injury or play poorly.

Of course a contract can be renegotiated, but that doesn't mean it has to be renegotiated.
After a contract has been signed it will only be renegotiated if both sides agree to it. Neither side can just turn around and tell the other they've changed their mind about something and it has to be renegotiated, or the deal's off.
