If the fight starts between 11pm-1am local Saudi time that is still a start time of 1pm-3pm on the West Coast of the US. That is directly against the SEC championship game.

If you watch IFL videos, Hearn was talking about the Saudi offer way back. Ruiz complaining might've had some influence but I highly doubt it's to the level you're inferring.That is why negotiations happen, to talk things through. The process can take weeks, even months.
I'm 100% sure that if Hearn could have convinced Ruiz to do it in the UK he would have done it there instead. Ruiz wouldn't budge, so they had to take the Saudi offer because Joshua did not want it in America. Ruiz's team agreed, so the fight is now a done deal.
