Because Saul Alvarez just made 154lbs, with no issue, just this past September and was able to more than keep a hard pace into the 9th round of the fight.
Alvarez is going up to 164.5lbs, to fight a super middleweight coming down a bit, but there's nothing about the chase of a money fight with Chavez Jr that gives any hint that Alvarez, at all of 26 years old, was dead at 154lbs.
With Alvarez's clear lack of interest in the middleweight belts, there's no reason for him to simply give away weight (especially where he's still likely able to make 154-156lbs with no issue).
