He's not trying to get out of anything. He's won't, however, be dictated to. He's the biggest attraction in the sport and will be in big fights regardless of opponent.

He would have to miss weight by like 6 lbs, I'm pretty sure that would be just as bad as dropping the title to outright duck GGG. And I'm sure Khan wouldn't be willing to fight a huge MW who didn't even make weight. It would be a death sentence.
