I would say for a party definitely Ricky Hatton, but for a chilled out couple of beers I would say Bernard Hopkins...
With Hatton would get seriously wasted and have one of those "WTF happened?" nights, and with Hopkins you could sit and talk for hours about the sport and learn a ton from him, I know there a few fighters this could apply too, Hopkins just comes to mind though.
