i just saw the all access ep 1 so this might be posted already but it was only a brief scene so could have been missed.. robert garcia basically reveals why ariza was fired because he kept making fighters do 1 day on / 1 day off training instead of making them "train their @ss off everyday" in garcia's words.. seems like ariza was trying to dictate the routine and garcia wanted the fighters to train solidly everyday..

Both Freddie Roach and Garcia fired Ariza because they claimed that Ariza got too big for his boots and started to think he was more important than the trainer and what he brought to the camp was more important than the coaching, and started to interfere with the coaching aspect of the training camp. I don't think its actually down to Ariza requesting Maidana to train one day and rest another, he just used it as an example, he was just saying that the one on one coaching is more important and Ariza's approach didn't coincide with that.
