What about walking on water, bringing people from the dead, curing blindness, and being resurrected?
Or are all those things not literal in the bible as well?
Also the "earth" in that passage could have multiple translations. It doesn't necessarily mean planet earth. It could mean the physical tangible world. God creating the heavens and the earth could mean the tangible physical world, and the world that exists outside of physics in the realm of spirit, thought and dreams.
Evening and morning only applies to planets within a solar system. Outside of a solar system there is no day and night.
Light and darkness is a metaphor for duality. Two opposite spectrums creating existence. The duality of light and darkness creating a break from the stillness. Duality and conflict creating a "beginning" within emptiness.. a Genesis.

The earth in that passage refers to our planet, planet earth. If you read a couple lines down you'd see the animals and birds that were created following each day were later given to men to have dominion over, animals and birds that belong to this earth. Not to mention the 6 day creation period is later reaffirmed in many other books of the bible such as Exodus. Plus it would make absolutely no sense for the authors to talk about some distant planet when discussing all the plants and animals of this planet during each day of creation.
You're over complicating the creation story because it doesn't neatly fit what we understand about the world today. But I think its clear that the day as described in the bible is a 24 hour cycle.
