Well there is two ways you can read into this guys boxing technique. From your description it sounds either like someone who just doesn't know what to do or someone that truly has that Dimitry Pirog style of always switching stances. If it is the first then just fight your fight and eventually you will start to time him because that style lends itself to being open. Now if he has the defense to go with that style ala Pirog then it's going to be the same just a lot more difficult. It's a risk taking style that they use but your going to have to land to make them hesitate. Don't let them get comfortable because then your going to find yourself stuck fighting at a pace that your not comfortable with.

Shave your legs and apply a generous mascara. That will make you look good.

With regards to fighting the other awkward fella. try to backpedal a lot and go forward to punch when you think he's off the stance and could not counter.

This is how you school an awkward fighter.

Stick to your fundamentals. Awkward fighters try to make you fight their game and get wild. Solid fundamental boxing will always beat an awkward fighter.

Back him up! Awkward guys usually stand up straight when their backed up!
Any time you can back up an opponent you do it, especially awkward styles.

              Punches in bunches

Make them box on the fron foot they hate coming forward or do the opposite and cut them off like lightening and throw punches in bunches they can't dodge them all

If by windmill punches you mean he throws wide, then straighter punches will beat him every time unless he is a whole lot faster than you. The only problem is that a lot of beginners keep their head still when they throw straight, but if you can slip or block while you throw and keep your punch in a straight line to his head, you should be able to beat his punch. Just throw a one two right down the middle, then look good by following up with whatever you like.

Stay you. Use the full combination of all your physical talents and mental acuity. By and by, it will be you that is the awkward one to fight.
