  • Turkey and Sweet Potato Soup Recipe

    THis is a recipe I just came up with off the dome. . .

    If I really want to get shredded I have to limit my carbs while maintaining protein intake. . .


    So, this is a great tasting, easy, cheap recipe. . . Brought to you by UGLYPUG!

    one 3 pound mini butterball turkey. . .

    5 sweet potatoes. . .

    2-3 cans of corn. . .

    3 small white onions (finely chopped to your preference)

    5 gloves of garlic - crushed/minced.

    Olive Oil.

    8 cups of chicen stock/broth. . Or you can use water if you have to limit sodium intake. .

    Season as necessary. . You can season with whatever you'd like - salt, pepper, chili powder, etc. .

    Place turkey in crockpot with 2 cups of chicken broth/stock. . . After 4 hours, place in sweet potatoes (chopped to your preference).

    After they are fully cooked in crockpot (about 6 hours). But jsut check every hour or so depending on your settings, etc. . Just make sure turkey is fully cooked, and sweet potatoes are soft.

    Pour a little olive oil in the bottom of a large pot/dutch oven. . . Saute onions, and garlic until caramelized. . DO NOT overcook/burn. . .

    THen pour the remianing 6 cups of chicken stock/broth in large pot. .. The turkey will be soft enough to mash up with a fork - do this until turkey is in fine shreds. .. Pour the turkey and sweet potatoes in the large oven. . . Add 2-3 cups of corn. . Add seasonings (salt, pepper, paprika, chili powder, whatever) of your choice. . . Bring to a LOW boil for 5-8 minutes. . .

    SERVE!!! NOTE: if you like ****y soups/foods, you can serve some siracha chili sauce (the bottle with green cap and rooster on it; chinese writing). .

    Packs a NUTRITIONAL PUNCH. . . FUll of protein and fiber. . And just enough complex carbs (from sweet potatoes) to give you energy. .

    Total cost is about 10 dollars. . . This will give you 2 bowls a day, for at least a week.

      Great stuff, Pug! Good call on the sweet potatoes, olive oil, and lots of garlic. Very similar to one that I make with chicken. I don't want to step on your thread but if it helps anyone, some ****es/flavorings that I've found to work great are;
      -Bay leaves (take them out after cooking)
      -spoonful of Oregano and 1/2 sp Thyme
      -teaspoon of Rosemary
      -Mushrooms (really adds a rich flavor)
      -pinch of Cayenne (heat helps substitute salt by opening up the tastebuds)
      -cracked pepper or peppercorns (you can fish them out after cooking)
      -fresh Parsley

      For those that don't know, seasonings can really help reduce the amount of salt necessary and soups/stews are notorious for needing a lot of salt to taste good. Take a look at the cans on the shelves, it's insane.

        Damn, yeah, mine lacked a little bit of flavor. . . I've found myself having to add a little too much salt for each serving. . . So these sound like great additions. . . Sometimes I make a mexican style chicken soup, and add some cilantro and lime juice. .

        Definitely going to throw these in for my next batch. Thanks a million kind sir!

          Just make sure turkey is fully cooked, and sweet potatoes are soft.
