The amount of times per week depends on how intense ur workout is, since it's such a large muscle group and plyo takes a big toll on ur joints you shouldn't workout more than twice a week, if it's really tough once a week is enough. Rest is really important, if u workout twice a week try to get at least 2 days rest between workouts.

I agree with Cutthroat. Don't take the CrossFit approach doing them all the time thinking you're going to be more "explosive" or "quick". Plyos should NEVER be done by a beginner and only if you have at least two years of solid strength training and no problems concerning tendons and ligaments. That being said, you can build speed and explosive strength doing exercises such as power cleans and Oly lifts(again plyo minimal requirements apply here as well) or heavy bag training training will work as well.
