  • is couscous considered a low glycemic complex carb?

Is couscous classified as a healthy, low-glycemic index, complex carbohydrate that slowly releases the energy, and in turn, not ****ing your insulin levels which causes calories to store up as fat?

or is it considered more along the lines of white bread, white rice, and pasta (not whole grain pasta), in that it is a complex carb, but it has has a HIGH GLYCEMIC INDEX?

Couscous is a low-fat complex carbohydrate, meaning it does not produce rapid ****es in blood sugar. It is often referred to as a grain, but is actually pasta. Like grains, such as rice, couscous tends to take on the flavor of whatever sauce or other ingredients it is prepared with.
It's my new favourite rice/pasta dish. Doesn't make me bloated like normal rice/pasta.

i think its safe to say its not composed of mostly insoluble fiber.... more like simple sugars

Couscous is a great option, but I would stick to quinoa... more finer, low glycemic, and also contains complete protein! A winner on every level!
