It really depends on how intense your training regime is, if you really work yourself out and push yourself to the limit during the week, I'd say take 2 days rest with some really light workout on either day like a bike ride or a walk.
I usually rest once or twice a week, and then every couple of weeks I'll have two days rest in a row whenever Im feeling a bit burnt out.
I have set rest days but its best to play it by ear, if you are feeling seriously worn out its best to take a day or two off, if you are feeling good then it wont hurt to skip that rest day.
Most of the pros I've met trained five days a week. Some six when preparing for a fight. When Dempsey was training for Willard, he was getting overtrained, and his trainer (Kearns) put him on a one week on, one week off routine for a while. By the way Dempsey ran seven miles the morning of the fight.
