does anybody use gauze and tape to wrap there hands during training? or is it mostly pros that just do this

I do not, some guys at my gym do, but i do not see the point, it takes a lot of time. I think it may just be a matter of preferance.There is nothing wrong with using guaze and tape. I like to train with 16oz gloves so i do not need that much extra protection besides the normal hand wraps. But whatever makes you a better fighter stick with that even if it is all in your head if it works it does not matter.

i just use extra long wraps, and go between the fingers. at least 180'' or more to get better stability around the wrist

wrapping with gauze and tape is more time consuming and expensive because the tape cant be reused

i prefer using 180inch mexican wraps, AND an entire 10yards of gauze, folded up for the knuckle padding.
works great.
