a good place to start would be Marvin Hagler and Joe Calzaghe

Watch Hagler's fight against Thomas Hearns and Calzaghe's against Jeff Lacy

The best modern day southpaws to learn off will be Collazo, Calzaghe and Winky Wright.

Winky Wright is not someone to watch considering he uses a very very tight guard which he makes effective because his forearms are 6 feet long. If normal people mimic his defense there body will be torn up after round 2.

Moorer at Lightheavy weight was a freak of nature. He could have reinged for years IMO, but sought his fortune at heavy weight. He was a violent force at LH and was a converted orthodox fighter for some reason. His jab and hook were devastating.
