I think Smith would fare much better against opponents his own size & if he bulks up he'll likely gain some power & stamina thats lacking because he has to make 168 whichbis unnatural for someone so huge.

It was his (and probably Gallagher's) choice to keep on fighting at 168. Both Smith and his nutrition guy said he'd been eating good and made the weight well, do no excuses on weight please.
Smith's success at 168 was largely down to those height and reach advantages so, whilst it's likely he will have some success at 175, I don't see him being dominant.
